Winner of the Meilleur Ouvrier de France (Best Craftsman of France)
award in 1996, Olivier Brulard learned his trade with such notable names
as Alain Chapel, Jacques Maximin and Michel Guerard. The Chef and his
team offer you original, creative and light cuisine throughout the
seasons, based mainly on gourmet recipes and regional products. Olivier
Brulard composes his works naturally with variations between land and
sea, and demonstrates his art of bringing out the qualities of the
ingredients, especially with his special alchemy of sweet and savoury.
Poultry, fish, vegetables make a subtle marriage with citrus and exotic
