On the banks of the Loire River, the last wild river of Europe and in
the heart of the Vouvray vineyards, this former monastery is a symbol of
the Val de Loire style with its troglodyte rooms. The lounges and dining
rooms are located in this charming XVIIIth century castle with its tuff
walls.
The Cuisine, almost exclusively based on products of the sea, is a
reminder of one of the favourite chapters in the gastronomic repertory
of Didier Edon: fish in all its varieties. Fish and seafood from
Brittany are delivered every day, and prepared in a half classical and
half sophisticated way, combining the flavours of the garden of the
Loire and elsewhere, served in summer on the terrace overlooking the
river.
